Why give brownies all of the love when blondies are just as good! Blondies combine the best of brownies and chocolate chip cookies into one irresistible treat. Their salty sweetness makes them perfect for any time of year.

 

Ingredients:

2 and 1/4 cups all-purpose flour


1 teaspoon baking soda

1 and 1/2 teaspoons cornstarch
1/2 teaspoon salt
3/4 cup unsalted butter, melted

1 cup packed light brown sugar
1/4 cup granulated sugar
1 large egg

1 large egg yolk, at room temperature
2 teaspoons pure vanilla extract
1 cup semi-sweet chocolate chips
Sea salt, optional but highly recommended as it is used for sprinkling on top

 

  1. Preheat the oven to 350°F. Place aluminum foil or parchment paper on the bottom of the baking pan. Make sure to leave an overhang on all sides in order to easily lift the bars out of the pan when cool. Set aside.

 

  1. Whisk the flour, baking soda, cornstarch, and salt together in a bowl. Set aside.

 

  1. In another bowl, combine the melted butter, brown sugar, and granulated sugar together until no brown sugar lumps remain. Crack in the egg, then the egg yolk. Finally, add in the vanilla extract. This mixture should be relatively thick.

 

  1. Pour the wet ingredients into the dry ingredients and combine totally. The dough will be very soft, yet thick.

 

  1. Fold in the chocolate chips. Do your best to combine them.
  2. Transfer dough to the prepared baking pan and press into an even layer. Sprinkle the top with sea salt if desired. If you want the recipe to look especially aesthetically pleasing, push a few more chocolate chips on top of the dough before baking.

 

  1. Bake for 32-35 minutes or until lightly browned on the sides. The best method for determining doneness is using a toothpick. Push it into the center of the pan; if it comes out clean, the bars are done.
  2. Cool on wire rack. Once they are cool, cut them into squares and enjoy!
