Chocolate Chip Pumpkin Bread

Yearning for a tasty autumn or winter snack? Well, give thanks — here it is! Chocolate chip pumpkin bread is a mix of two seasonal favorites and can be enjoyed all year round. Though at first the combination may seem odd, the sweetness of the chocolate perfectly complements the flavor of the pumpkin bread, satisfying two different cravings at once. It makes for a perfect sensation of hard and soft as a great dessert treat. All will sing joy when you bring this snack to a family gathering or event. If you aren’t a fan of chocolate chips, simply replace them with raisins and nuts.

Ingredients:

  1. 1 cup corn oil
  2. 4 eggs, beaten
  3. ⅔ cup of water
  4. 2 cups canned pumpkin
  5. 3 ⅓ cups flour
  6. 1 ½ tsp salt
  7. 1 tsp ground nutmeg
  8. 1 tsp cinnamon
  9. 2 tsp baking soda
  10. 3 cups sugar
  11. 1 cup dark chocolate chips

Directions:

  1. Preheat oven to 350 degrees (F).
  2. Combine oil, eggs, water, and pumpkin and mix well.
  3. Mix together flour, salt, nutmeg, cinnamon, and baking soda and stir into the pumpkin mixture.
  4. Stir in the sugar, then the chocolate chips (or raisins and nuts).
  5. Turn mixture into 2 greased loaf pans, 12 by 3 ⅓”, 2 ½”, or 9 x 5 x 3.” Bake for one hour or until done (toothpick comes out clean).
  6. Cool in pans for 15 minutes, turn out and finish cooling on a rack. Yield: two loaves.
